If you are interested in a career in food preparation or food service for the hospitality industry then Wintec’s Certificate in Catering (Level 3) is just for you.
It incorporates the units required for the National Certificate in Hospitality (Introductory Cookery) (Levels 2), National Certificate in Hospitality (Basic Cookery) (Levels 3) and National Certificate in Hospitality (Food and Beverage Service) (Level 2).
On completion of the programme, you will be eligible to sit the City & Guilds of London 7065 Certificate in Food Preparation and Culinary Arts examination.
Programme Content
You will study:
Skills A and B
You will learn knowledge surrounding food preparation and basic cooking in a commercial environment; this includes food safety, food handling, food science and nutrition.
Cookery A and B
You will be given an introduction to the different methods of cookery.
Pastry
This covers the preparation and cooking of basic pastry dishes, cakes and sponges. You will also perform food costing / calculations that are required when working in industry.
Bakery / Larder
This will provide you with knowledge surrounding basic bread making, desserts and savoury dishes as preparation for working in a commercial kitchen.
Restaurant Service
You will learn both the theory and practical elements for effective food and beverage service. This course is completed in our licensed students training restaurant and bar, Windows on Avalon.
Cookery Production
You will learn to work effectively in a large commercial environment, preparing and cooking a variety of menus for the student training restaurant.
Work Experience
You will complete three weeks work experience with a suitable establishment, where you are able to apply and enhance the skills gained during the programme.
Career Opportunities
The Certificate in Catering (Level 3) may lead to employment as a Trainee Chef, 3rd or 4th Cook in hotels, restaurants, cafés and hospitals or part of the front-of-house personnel.
Entry Criteria
Open entry, although candidates must demonstrate a reasonable likelihood of success. In addition candidates are expected to have completed three years secondary education.
Additional Information
You will study at Wintec’s state-of-the-art Centre of Hospitality which is located on Wintec’s Avalon Campus. This centre includes two large commercial kitchens, a production kitchen, a restaurant with a seating capacity for 80, featuring indoor and outdoor dining, and a licensed bar.Small class sizes, a tutorial team with varied national and international industry experience, and close association with local industry and professional industry bodies, allow you to get the most out of your studies.
You will also have the opportunity to compete in the annual Waikato and National Culinary Fare. Work experience opportunities often come available throughout the year for such key Waikato Events such as the Hamilton 400 (the V8 supercar series), World Rally Championships and the National Fieldays at Mystery Creek.
